TheGoodFoodPage’s Spicy Korean Stew with Noodles, Dumplings & Homemade Rice Cakes!

It’s time to upgrade your usual Maggi Noodles to Spicy Korean Army Stew (Budae Jjigae) inspired Ramen Noodles! It’s super easy, can be made with pantry ingredients and your favourite food additions!

It has been pouring rain ever since I woke up, which has made the weather outside cool and left me craving something warm and spicy! I have been craving a one pot-hot pot-style meal for a while now, so there couldn’t have been a better opportunity to dump some ingredients, let stew and dig in.

Now, if you’re aware about the Korean army stew, it is as the name suggests, a stew made my the Korean army during the food shortage after the American War. The fact that it is a fusion dish gave me ample leeway to fuse different food , which keeping in mind that there was a shortage of food in my belly, worked out pretty well, historically. (as if I needed a more pressing reason to treat myself keeping aside the rainy weather and the historical technicality, moving on…)

Made with just pantry ingredients, Maggi Noodles, Prasuma’s Vegetarian momos and my homemade Rice Cakes, this delicious bowl of Korean Army Stew-inspired noodles was born. At this point it is integral to mention that you will most definitely love this heart-warming stew, because you can add your. most favourite ingredients to it — see you’re guaranteed to love it!

The stew is flavoured with an umami combination of Gochujang, a touch of Dark soy sauce and honey with finely chopped Garlic — that is added right at the beginning of the cooking process in water. Then the homemade Rice Cakes (Garae-tteok) are dunked in, followed by the Maggi Noodles and lastly the dumplings stewed and bubbled until they were enveloped in a thick and saucy… um… sauce. Garnishes were chopped coriander (as an ode to its Indian-born chef and also as I did not have green onions) along with toasted sesame seeds.

Here’s how to make your own Korean Inspired Noodle stew:

Water, depending on the ingredients & thickness of the sauce.

1 heaping spoon of Gochujang

1 tsp Dark Soy Sauce

1–2 pods of Garlic, Minced

Honey, per sweet preference

Your choice of Additions (I used Noodles, Dumplings & Homemade Rice Cakes)

Your choice of Garnish (I used Coriander &toasted Sesame Seeds)

Into a saucepan, add Water, Gochujang, a touch of Dark soy sauce and honey with finely chopped Garlic and bring to a boil.

Once it comes to a rolling boil, add your ingredient with the highest cook time first (in this case, the rice cakes) and then proceed to add the ingredients that take lesser time to cook (in this case, noodles & dumplings)

Adjust the consistency of the stew according to your liking of thickness (or thinness). Pour it out into your bowl, garnish and your ready to dig in.

All in all, as I write this I am happy with a warm bellyful. The rice cakes were pretty easy to make and the kneading gave my healing wrist a good workout (the doctor would be proud, or not). My lunch today was just what I wanted and was delicious to the finishing drop and mind blowingly satisfying.

I would highly recommend that you give this a try with all your favourite elements added into it.
